Cachito de jamon y queso
Ingredients
1 (1/4 oz) package active dry yeast
1 cup warm water (110 degrees)
2 tablespoons honey
2 tablespoons splenda
1 cups white whole wheat
1 1/4 cups bread flour
1/4 either flour for dusting
1 tablespoon vegetable oil
1 teaspoon salt
1/2 lb ham, finely chopped
1/2 lb turkey breast finely chopped
6 oz mozzarella (I used cheese sticks cut along side)
2 tablespoons of melted butter for brushing after cooking
Instructions
On a bread maker, combine yeast, the warm water, honey and splenda; whisk to dissolve and allow to bloom 10 minutes.
Mix the flours and salt, oil. Slowly add in flour and start the machine on the dough setting. It will take 1:30 hours
Chop the ham and turkey breast to your liking I prefer thin strips and mix it and to ease the rolling separate them in 12 equal portions
Take the dough out and separate it into 2 balls. On a floured surface roll each part into a really thin rectangle, with a knife cut triangles. I get 13 triangles sometimes or I better say don't always get perfect figures but they are triangles anyways. ; )
Place half of the cheese stick and a portion of the ham mix over the triangle. Fold the corners over the ham mix. Roll each triangle starting with the biggest edge into a crescent. Once rolled, tuck the edges and place on a clean baking tray. Repeat with the rest of the triangles.
Preheat the oven to 375º F.
Bake for 25 minutes until they look golden brown. Remove from oven and place them on a wired rack brush each cachito with butter.
Tip: cut into retangles and put pieces of bacon, green olives and raisins on it you may call them mini pan de jamon
Whole wheat pancake mix
1 1/4 whole wheat flour
2 teaspoons baking powder
1 teaspoon cacao powder
1 teaspoon cinnamon powder
1 pinch of salt
1 tablespoon of sweetener or sugar
1 tablespoon of vanilla
Mix well in a bowl and pour it on a glass container.
When you are ready to use simply mix;
1 1/4 cups of almond milk
2 tablespoons of coconut oil
1 egg
When all liquids are homogenous add the dry mix and whisk for a couple minutes until dissolved.
Cook 2 1/2 min on each side on a preheated pan at medium heat... if you add fruit cook a little longer while nuts and or chips don't need to.
You may change milk, flour, egg or sweetener to your taste or needs.

Butter....milk????
So I decide to go and buy some, but there was the snow, and it was so cold outside that I decide to leave for a different day, but my sweet daughter decided she wants to eat the scones that day so she would ask our neighbor (since she was the one with the original scones and recipe) if she may have some buttermilk she may spare and so she went to the neighbor house and ask her to our surprise she came with a new recipe and apologize for not having buttermilk but explain to us how she never bought it because it was so easy to make your own.
So I gathered some different methods here remembering how my own gram mother used to make it...
The cultured buttermilk; I remember when my grams was running low on Suero she kept always the last cup of it and mix it with a liter of fresh milk, she use to left it at room temperature, now I understand it wasn't the TAPARA in which she used to storage but the Streptococcus Lactic a bacteria that comes in the buttermilk commercial that not only is good for you to obtain the buttermilk but also is good for your stomach like yogurt or at least that's what my gramma used to say
The acid plus milk;
Basically buttermilk is sour milk so mix a cup of milk with one tablespoon of lemon or vinegar, let it sit for 5-10 min is going to curdle....mix it again and you have buttermilk.
With cream of tartar plus milk;
By now you have figure out that the base for buttermilk is milk so we will use one cup of milk and 1 3/4 of cream of tartar, mix it well and let it sit for 5-10 min, when it curdle mix it back and you have homemade buttermilk.
Use as needed and enjoy you delicious Buttermilk.....(insert your dish name here, e.i. pancakes, biscuits, scones etc)........
Homemade Buttermilk and of course Butter!
Cant they sell smaller portions (probably yes; but they wont) so there are so many practical recipes that will tell you something very alike to what I am about to share but i think, the butter/buttermilk method is by further the best because offer you two products out of one while the milk lemon/vinegar offers you 1 product out of two .... sounds contradictory, weird some may say but I think we should get most out of everything so there you go!
Butter.....milk??? The one everybody may have the ingredients (even lactose intolerants)
For my favorite two out of one you will need
Cream (yes, thats pretty much it) any cream should work just fine.
Steps to follow;
1.-Place the whole content of the cream on a blender or stand mixer.
2.-Blend for 2 to 7 min, yes is true in just a few minutes you will have delicious fresh butter and do you see the milky liquid under the butter you just churned? that is buttermilk old fashion buttermilk that is. Now you may get a sieve or a cheese cloth and strain the butter away from the buttermilk.
At this point you will have to decide if you wanted just the buttermilk for some pancakes there you go you have homemade buttermilk,
But I would recommend to place the butter back in the blender and some clean ice water, blend it for a couple seconds and throw away the water, repeat for 2 to 7 more times; I find that the most you repeat this process the better consistency your butter will have and it will keep longer too, even though if those pancakes were made with your favorite recipe... it may not last that long!
Another ingredient you may use with your butter is salt, not only will help with flavor but it help with the preservation part.
This butter you may keep in the refrigerator for a week or frozen for up to three months.
Usually I would mix half of this butter with some salt and fresh herbs... have you try a Ribeye topped with fresh herbs butter? if you dont, this is the time to try it.... or maybe you are more of a salmon kind of person; well I would do some parchment paper packages with vegetables topped with pieces of salmon place some slices of lemon... half a tablespoon of dill butter a sprinkle of salt... and voila! Enjoy this and any othe recipe, please remember to share pictures of your butter churning and recipes to follow with the final products.
How would you use either the butter or the buttermilk?

Ribollita
Ingredients
1 tbs extra virgin olive oil
1 small Red onion, thinly sliced
1 carrot cut diagonally into 1/4-inch dice
1 celery stalk diagonally into 1/4-inch dice
1 whole garlic clove mashed or small diced
3 leaf roughly chopped cavolo nero (black cabbage) (I used Rainbow and red chard)
1/2 pound roughly chopped white cabbage
1 tomato or tomato paste 2 tbsp
1/4 Broccoli
1 small Zuchinni
1 cup Cannellini beans
2-3 cups vegetable broth (or more, if necessary)
Salt and pepper
Basil
Freshly grated Parmesan from a good quality piece
Instructions
In a pot, heat the olive oil and add the onion, sliced garlic and let it cook a few minutes, Sprinkle gently with salt, stir and cook until the vegetables are soft.
Add white cabbage and cook until they’ve softened and the flavors have blended, about 10 minutes. Add the tomato and stir until it’s well mixed throughout the vegetable mixture. Mix in carrots and the stall of the Broccoli if you are using it let it boil for a couple of minutes, add the rest of the vegetables. put the basil on it. Taste and adjust for salt and pepper,
Add the beans and enough water to make it look soupy (about 3 cups). Stir all around and simmer for 20 minutes until the soup thickens slightly and tastes like all the flavors have blended.
Ladle the soup into bowls and serve it over old bread slices toasted, and the Parmesan shard it on top.
Zulyt note:
If you can’t find black cabbage, you could try using just plain, ordinary kale or chard as I did on my soup today or leeks ( there is not food police that will take you to jail if you change something you don't have or like for something else.... Slightly alike)
This soup is serve in layers .... 1 layer of old bread .....1 layer of soup with vegetables ....1 layer of old bread ......another of soup and finally parmesan shards! I don't eat bread so I omitted and it was amazing!!!
Enjoy!!!
