Cachito de jamon y queso

Ingredients
1 (1/4 oz) package active dry yeast
1 cup warm water (110 degrees)
2 tablespoons honey
2 tablespoons splenda
1  cups white whole wheat
1 1/4 cups bread flour
1/4 either flour for dusting
1 tablespoon vegetable oil
1 teaspoon salt
1/2 lb  ham, finely chopped
1/2 lb turkey breast finely chopped
6 oz mozzarella (I used cheese sticks cut along side)
2 tablespoons of melted butter for brushing after cooking

Instructions

On a bread maker, combine yeast, the warm water, honey and splenda; whisk to dissolve and allow to bloom 10 minutes.
Mix the flours and salt, oil. Slowly add in flour and start the machine on the dough setting. It will take 1:30 hours
Chop the ham and turkey breast to your liking I prefer thin strips and mix it and to ease the rolling separate them in 12 equal portions
Take the dough out and separate it into 2 balls. On a floured surface roll each part into a really thin rectangle, with a knife cut triangles.  I get 13 triangles sometimes or I better say don't always get perfect figures but they are triangles anyways. ; )
Place half of the cheese stick and a portion of the ham mix over the triangle. Fold the corners over the ham mix. Roll each triangle starting with the biggest edge into a crescent. Once rolled, tuck the edges and place on a clean baking tray. Repeat with the rest of the triangles.
Preheat the oven to 375º F.
Bake for 25 minutes until they look golden brown. Remove from oven and place them on a wired rack brush each cachito with butter.

Tip: cut into retangles and put pieces of bacon, green olives and raisins on it you may call them mini pan de jamon
