Baked Falafel

1 cup dried chickpeas, soaked for 24 hours and drained
1/2 onion       
3 tbsp of cilantro chopped                         
1/4 cup of fresh mint 
7 tablespoons of chopped parsley 
3 cloves garlic
1 teaspoon cumin
2 teaspoons coriander
1 teaspoon chili powder
pinch of cayenne
couple tablespoons of olive oil - for the falafel and for the baking sheet!
salt and pepper to taste
2 tbsp sesame seed
You'll need a food processor too.

Soak a cup of dried chickpeas in fridge for 24 hours. Drain them and allow them to dry a little, put the chick peas with the rest of the ingredients but the sesame on a food processor and process for a few minutes until the chick peas have a meal consistency aproximately 2-3 minutes. Now you can mix in the sesame. I used to separate them in equal parts and then form the falafel but now that i have the size more or less meassure with a spoon i use it to make them all in the same size.... Forming a small ball and with my finger giving it the plane form we are use to see on them. If they stick to much on your finger wet your finger ever so little that you dont get water in the falafel but you may give them the form without the mix sticking to your hands.
The falafel will be baked at 400 degrees F - 10 minutes for one side and 15 minutes for the second
